Grandpa’s Famous Hamburger Potato Casserole

Perhaps one of the most exciting parts of going to Grandma and Grandpa’s house was knowing that I was going to get a good meal. If your Grandpa was like mine, you know that he didn’t want all the extra vegetables, spices, and fancy ingredients put in his food. Even an onion would make him push away from his plate at the table. That is why my Grandma always made delicious meals like this, and of course, named them after Grandpa!

This casserole doesn’t need all the extra frills to taste really good. There are only five ingredients, and there’s a good chance you have all of this in your pantry and refrigerator already. There is enough flavor in the dish already that you don’t need to put in spices or other items that the picky eaters in your family aren’t going to eat.

Grandpa always asked for seconds and we usually had no problem cleaning this dish right out! Give it a try the next time your family comes to visit.

Quick Tip: Swap out the mozzarella cheese for cheddar for a whole new taste.

Should the hash browns be thawed before baking?

    1. Granny Fedder says

No, whenever I use frozen hash browns I never thaw them.

    2. Cheryl says

I just made this last night. I used frozen hash browns turned out perfect. I did cook it a little longer covered 30 min then took cover off put cheese on and returned to oven for 10 min.

      I’m currently making this dish.
I let it bake covered for 30 mins & when I removed the foil covering the dish was only “warm”. I’m thinking the hashbrowns should have been thawed before making this because mine is back in the oven, uncovered baking for another 30 mins at least I would think… Hoping it’s tasty otherwise I’m left hungry and a bit annoyed.
This recipe needs a few more specifications.

  2. CHILLY SAUCE says

Add sliced thin potatoes instead of hashbrowns

    1. Fred says

Sounds even better, somehow I doubt grandpa had frozen ore-ida hash browns on hand.

  3. Denise says

I use tators tots on top.

  4. William Krueger says

Tomorrow’s dinner we used to call it Tater Tot Pie.

  5. Bonnie says

I think imma brown the hashbrowns first tho.
