My granddaughter Jocelyn is quite the gardener. She’s 4 years old and she can already name more vegetables and herbs than I can! We love having her stay with us and she enjoys spending time at our house in the country. Jocelyn and I have set up a small patch in the garden for her to grow her own veggies – I really think this is one of the reasons she loves eating all kinds of vegetable dishes and is never picky when it comes to food.
She was so excited when the first zucchinis were done and she wanted us to have them for dinner right away! Which meant I had to quickly find a recipe that would turn those zucchinis into a delicious meal. I didn’t want her to be disappointed – although I think I was worrying for nothing.
I made these zucchini patties and served them with mashed potatoes. Boy, did we have our bellies full that night! She had 4 patties and asked me if we could make them again the next day!
The key is to drain the grated zucchini before adding the other ingredients. This way you make sure the batter is perfect and not too runny.
