Creamy, Dreamy, And Totally Delicious: Roasted Cauliflower Chowder

YUM! Give Me This, And Only This For The Next Couple Of Weeks!

I love going to Aunt Carmen’s for the weekend because she always spoils me even though I am too old to spoil. I am her favorite niece so whenever I am there, I often get the good things she has to offer. Mom actually told her once not to spoil me (Mom! I am not a kid anymore!), all in good faith though. She has quite a lovely house and a large one at that. She always prepares the nicest guest room for me. Sometimes, I bring my boyfriend over and he helps her in gardening. Yup, he is an all around guy! Seeing him in a dirty shirt is actually a change of scene. He always wears a different type of clothing for work.

Last time we were there, Aunt Carmen even hosted a small dinner party for us. Nothing fancy. She just prepared a small banquet and invited a few of her neighbors, some of them I used to play with when I was a kid whenever we visited her. They’re all parents now and they have lovely kids! It was quite nice to see Aunt Carmen smiling too.

The night before we left, she made us her famous cauliflower chowder while we had a conversation about the family most especially about my cousins. The cauliflower chowder was so creamy and tasty that it all warmed us up while we talked. She worries for all of us all the time. These were the times I wish she was just living near us so I could always visit her.

Quick Tip: Roasting the cauliflower adds a ton of flavor and keeps the chowder a little lighter.
