We often get wrapped up in the common casseroles of green beans, broccoli and cheese, and various forms of rice dishes.
However, how about we try something a little different, shall we? When i was a little girl my mother had a huge garden that she would tend every summer. In her garden, she had giant zucchini squashes growing rampantly. So, we got to eat a lot of zucchini dishes, including zucchini casserole. This casserole makes a wonderful side dish and is quite easy to throw together.
I am currently making my Christmas dinner meal plan and I am putting zucchini casserole on the list. Luckily for me, I froze some of the delicious squash in the freezer from last year’s harvest. You see, I live on the east coast so it’s pretty cold right now and there aren’t any gardens blooming, well, at least not outdoors haha.
So, yeah, any, this zucchini casserole is a great change to your dinner table and it tastes amazing. Enjoy!

Quick Tip: Call me crazy but I like to sprinkle a few splashes of soy sauce on top of this casserole as a condiment. Yum!
