Spring fever had hit my house. The temperatures had finally broke from the zero degree mark that we had been stuck at for months. My husband fired up the lawn mower, my little girls got out the bubbles and sidewalk chalk, and my son actually came out of his room with shorts and flip-flops on. I think it was safe to say, we were happy to see the warmer weather. My favorite thing to do, besides just being outside, is cooking on the grill. I found this recipe for pasta chicken salad on group recipes and figured it would be the perfect start to our summer.
I cleaned my big ol’ cooking machine off and got to work. My husband was a little confused at first with the pasta and the lettuce together, because I had never served anything like that before. After we all tasted it though, it was really good! I was happy that we stepped outside of the box a little bit and tried something new.
That night, after cleanup, we all sat out on the back deck and watched the sun set together. I knew it was going to be the best summer yet!
