My Aunt Maria is perhaps the best cook in the world…she’s at least the best one that I know. She has some pretty strong Italian roots, so of course she knows what she’s doing in the kitchen.
When we went for dinner a few weeks ago, she had her usual six foot table full of foods for us to try. When I came across the Spinach Artichoke Chicken, I thought I had died and gone right straight to heaven.
This is my favorite flavor combination, but usually only served in a dip where I come from. When I realized I was getting a whole meal, I just couldn’t believe it. I took two helpings and didn’t even feel bad about it.
Aunt Maria went to the kitchen and jotted down the recipe, which was very similar to this one I found on Spend With Pennies. I made it for my husband and he loved it just as much as I did.
No we have this pretty regularly and I can’t get enough of it. It’s so creamy and comforting, it’s perfect for a cold winter night. It’s simple to make any weekday too so I will whip it up when we have sports games and other activities going on.
