You’ll Have To Wash Up After Eating This Cajun Dirty Rice

This is an awesome meal to take to potlucks and dinner parties. I always double the recipe because it usually is one of the first things to go. When I am taking it with me, I will put it in the slow cooker and keep it on low. The flavors marry together even more and it will stay good like this all day long. Just keep an eye on it and add more water as necessary so the rice doesn’t dry out.

When serving a crowd, make sure that you provide a nice cornbread. It really completes the meal and you can be sure everyone gets filled up!

 

Ingredients

1 pound lean ground beef

1 pound beef sausage

1 onion, finely diced

1 (8 ounce) package Zataran’s dirty rice mix

2 cups water

1 (10 ounce) can Hunt’s diced tomatoes with green chile peppers

2 (15 ounce) cans Bush’s kidney beans, drained

salt and pepper to taste

 

Instructions

In a skillet over medium heat, brown the ground beef, sausage, and onion; drain.

In a large pan, combine rice mix and 2 cups water. Add diced tomatoes and chilies. Stir in the kidney beans. Bring to a boil, then add meat mixture.

Season with salt and pepper. Return to boil, reduce heat, and cover, stirring occasionally. Cook for 25 minutes, until rice is easily fluffed with a fork.
