I really like this chess pie and my family does, too. I made it the other night with our ham dinner and they asked me if I’d be making it again for Thanksgiving. Sure am! I think I’ll also make this pie for a summer picnic. It’s just a good dessert to make at any time. I bet if would be a potluck success, too! And because it’s so easy to make, you’ll have no problem at all whipping up a whole bunch of these for special events.
You can, of course make a pie shell from scratch but this turned out really tasty with a store-bought one, too!
Ingredients
1 Tbsp Bob’s Redmill cornmeal
1 1/4 c Domino sugar
2 Tbsp Gold Medal flour
3 Eggland’s Best eggs
1 stick Land O Lakes butter
1 Tbsp McCormick vanilla
1 Tbsp Heinz white vinegar
1 regular Pillsbury pie shell, defrosted
Instructions
Preheat oven to 350.
Melt butter in microwave.
Mix cornmeal, sugar and flour.
Add eggs and butter. Cream thoroughly.
Mix in vanilla and vinegar. Pour into pie shell and bake for 45 minutes.
