As a busy mom, it feels like my kids are always pulling me in ten different directions. Now that they are older, they have pretty busy lives. Between school, athletics, extracurriculars, and a social life, I wonder sometimes if my car even gets to cool down. With always being on the road, it’s hard to find time to make something in the kitchen. There doesn’t seem to be enough space to even turn the oven on.
So, I am always searching for simple and yummy recipes that can be put on the table quickly. When I found this recipe for crunchy lemon chicken on Recipe Lion, I knew it was one that was going to fit nicely into our hectic lifestyles.
The fact that chicken tenderloins were used was perfect, because they cook up fast and my kids love them. The first time I made this we barely had enough to go around. Now, I usually double the recipe just to make sure.
They always get eaten right up! Then, everyone heads out in their separate directions once again. It’s nice to get a few minutes around the table though, and these certainly help!
