Who Wrapped Up Reuben?

The recipe that I found that is listed here calls for turkey as the meat. I wasn’t having that though. The best part of a Reuben as far as I’m concerned is the corned beef. I swapped that out first thing when I put these together. When my daughter wants one, she opts for the turkey. I have tried them both ways and either way is pretty tasty. These are awesome to cut into pinwheels for potlucks and social lunches too. Yum! Check out what they are saying about this recipe over at Group Recipes:

Ingredients

2 c cole slaw mix

1 c. shredded carrots

2 Tbsp Heinz cider vinegar

6 Tbsp Kraft thousand island dressing

4 (8″)whole-wheat or multi-grain tortillas or sandwich wraps

4 leaves romaine or butter lettuce

8 thin slices turkey(about 1/2 lb)

8 thin Gruyere or Swiss cheese slices

 

 

Instructions

In a bowl,toss coleslaw mix,carrots,cider vinegar and 2 Tbs dressing,until combined.

Spread each wrap with 1 Tbs. of the remaining dressing. Line each wrap with a piece of lettuce. Place 2 slices of turkey on top of dressing in the center.

Place 2 slices of cheese on top of turkey. Top with about 1/3c of the coleslaw. Roll up burrito-style,touching in sides.
