I love Mexican food. My oh my, does that satisfy all of my cravings. I can just picture it now: a big wrap, filled with Mexican yellow rice, freshly cooked black beans (or refried will do!), lettuce, tomatoes, fresh shredded cheese, and then a heaping dose of chicken. Ah, so absolutely scrumptious and filling, too! It brings so much flavor to the mix as well as deliciousness.
I love when I am able to find a lunch that is this good and I crave so much. That is when I know I have hit gold with a recipe. Well, my favorite part about this recipe is the ease to make it.
What I typically do is make a big batch of rice and beans, then prepare all of my fillings and then create an assembly line. I make anywhere from five to ten burritos. Then I wrap them up in cling wrap and freeze them for future meals.
This is so simple, and yet so incredibly delicious. I really cannot get enough! Well, it has been such a life saver for me for quick and rushed mornings, that I have now even created other burrito ideas to have even more variety.
