My husband never had this while we were on vacation so long ago. He couldn’t get enough of the tacos, enchiladas, and burritos. He isn’t one to stray too far away from the foods he knows and likes either. So, when I made this, I wasn’t quite sure if he would even try it. Much to my surprise, he not only tried it, he really enjoyed it, and even asked for seconds. Thank goodness! I can add this recipe to my list of favorites. Ingredients
1 lb. lean ground beef
1 onion, diced
olive oil
20 (med size) corn tortillas cut into 1-inch squares
11/2 cup canned Old El Paso red or green mild enchilada sauce
1/2 cup black or green olives sliced
1 cup shredded queso fresco (mexican cheese) or Kraft cheddar cheese
Pico Pica brand mild taco sauce to taste (a must)
1/4 cup chopped fresh cilantro
1 lime cut in to wedges
1/2 cup Daisy sour cream
salt & pepper to taste
Instructions
In a large nonstick saute pan Brown off lean ground beef along with the diced onion
add the tortilla squares to the mixture along with a little olive oil stir till tortillas are nice and hot and well mixed with the beef & onions
add the enchilada sauce
( here you can make the Chilaquiles one of two ways)
Dry : just enough sauce to flavor the tortilla mixture
Wet : enough sauce to make a creamy texture.
add olives,and cheese, mix together well,once cheese is melted
add Pico Pica sauce to taste
salt & pepper to taste
serve and top with some sour cream,cilantro and a squeeze of lime
