After my husband and I got married many years ago, we couldn’t wait for the reception to be over so that we could head out on our honeymoon. Don’t get me wrong, it was a beautiful party and we enjoyed spending our special day with all of our family and friends, but we were going to Mexico! It was the first time that I had ever been out of the country, and I was so excited. I felt like a little kid going to Disney World for the first time.
We had seven days there, and they were the most amazing seven days of my entire life. We saw so many things, did so many activities, relaxed, enjoyed one another’s company, and ate some of the best food ever. There is something different about eating Mexican food in Mexico versus the states.
It’s just so much better. My favorite thing was the Chilaquiles. So, when I found this recipe on Group Recipes several years later, I was so anxious to make it. It went together easily, and when I took that first bite, it was like I was on my honeymoon all over again.
