Well, I found the perfect breakfast burrito recipe. I know, it is not hard to make a breakfast burrito and you really do not need a recipe. I mean, you can literally put whatever you want in there. Our favorite is eggs, bacon and cheese. Sometimes we add some died potatoes, too! They have been such a life saver in the morning when my husband is running out to work and I need to get my day going.

Ingredients
5-6 Eggs
1 package Sausage
3 medium Potatoes
1 cup Kraft Cheese
Old El Paso Tortillas – I use the standard/medium sized tortillas
Instructions
Cook potatoes. Poke potatoes with a fork, cook in microwave on high for 4 minutes or so, cook until slightly soft. Set aside.
In a large skillet, brown the sausage, drain and set aside for later.
Scramble eggs. Add sausage back into the pan. Cut potatoes into cubes and add to skillet mixture. Add any additional seasoning.
Add a few spoonfuls of egg and sausage mixture to a tortilla. Top with shredded cheese. Fold. Wrap with plastic wrap and store.

Quick Tip: Keep these in your freezer and simply thaw overnight and pop in the oven in the morning for a hot breakfast.
