If you wanted, you could also do this in a slow cooker. Just pre-cook the meat and make sure to add extra water to allow the rice to cook. There are no substitutions or variations necessary to make this recipe the best it can be. Feel free to experiment though. It’s very versatile.
Ingredients
One pound of ground beef – I use chuck or lean
1/2 cup chopped onion
1/2 cup chopped green pepper
One regular (14.5oz) can of Hunt’s diced tomatoes
3/4 cup of rice, uncooked
One envelope Lipton Onion Soup Mix
One cup of water
spices to taste – diced garlic, Frank’s Red hot sauce, your choice
Kraft Shredded cheddar cheese – at least 1/2 cup
Instructions
Brown the ground beef in a skillet that has a lid.
Drain any grease.
Add the chopped onion and green pepper.
Cook until veggies start to soften.
Add the can of diced tomatoes with juice, the rice, the dry soup mix, the water and the spices.
Stir to blend.
Cover and simmer for 30- minutes until rice has cooked and absorbed liquid.
Sprinkle shredded cheese on top; cover and let cheese melt.
