Ugh…meatloaf…even as a kid I wasn’t a fan. Now that I’m older, I can appreciate it a little bit more, but still not my favorite food. My kids loathe meatloaf, yet they love meatballs…how does that work? Anyways, we were going to visit my very Italian Uncle Antonio one day in the city. He said he would feed us, big surprise right? When we got there I was expecting one of his famous pasta dishes.
I asked what was for dinner and much to my dismay he said…meatloaf. I had to hold back my disappointment and put on a happy face. When he set it on the table I contimplated even trying it.
He of course served me a huge portion and man I was glad he did…it was amazing! I was so satisfied with this dish I looked for a recipe of my own and found this one on The Pioneer Woman.
Although it’s not Uncle Tony’s…it’s pretty darn close!

In your “Uncle Antonio’s Italian Meatloaf recipe”, it states that it takes two (2) cans of diced tomatoes. Is this 2 (28oz.) cans or 2 (19oz.) cans.?
