I agree, this casserole makes the perfect weeknight dinner and it’s so super simple to throw together.
Ingredients
1 pound Ground Beef Or Turkey
1 whole Small Onion, Chopped
1 whole Envelope, McCormick Taco Seasoning Mix
1 cup Kraft Shredded Colby/jack Cheese, Shredded
24 ounces, weight Mashed Potatoes, Homemade Or Store Bought
1 whole Eggland’s Best Egg
Instructions
Preheat oven to 375ºF. Grease an 8-9 baking dish.
In a bowl, mix together potatoes, egg and 1/2 cup of cheese. Set aside.
In a large skillet, brown ground beef with chopped onion until no longer pink. Drain if necessary. Return to pan and stir in taco seasoning. Spoon meat on to bottom of baking dish. Spread potato mixture on top of taco meat.
Sprinkle remaining 1/2 cup of cheese on top. Bake for 30 minutes or until heated through.
