My brother and I were lucky enough to be born within just a year of each other.
That meant that we grew up right alongside one another. Everything he did, I did too. It got annoying at times, but for the most part I wouldn’t change it for the world. Among many of the things that we shared, we loved our mom’s tuna noodle casserole. It was so quick and simple, and when we were in college together, it was our go-to meal. We could eat for at least two days on that meal so it was a poor college student’s dream.
When we moved on and found our spouses, we still stayed pretty close. At one gathering we talked about that tuna casserole we used to eat on those late night cram sessions. It gave me the idea to look for a new recipe to surprise him with for his birthday.
When I was browsing, I came upon this recipe from the web. It was just what I was looking for. I couldn’t wait to make it for him. He was surprised and couldn’t stop laughing when I served him his birthday meal. It was really good.
All four of us couldn’t get enough. It’s a regular meal at my house these days!
