Try Something New This Holiday Season: Southern Yam And Pineapple Casserole

Are you in the market for a sweet side dish? Well, you’ve GOT to try this yam and pineapple casserole. It’s the sweetest side on the planet. Seriously, I don’t think side dishes get much sweeter unless they are a chocolate cake. I made this yummy yam and pineapple casserole last year for Thanksgiving and everyone loved it. In fact, my husband thought it was a dessert. I mean, I guess it could be.

I have had sweet potato casserole plenty of times but I’ve never had it with pineapple. It was super sweet and very tasty.

 

Ingredients

1 can (17-ounce) yams or sweet potatoes

4 tablespoons Domino brown sugar

2 Eggland’s Best egg whites, beaten

4 tablespoons margarine, melted

1/2 teaspoon Morton salt

1/2 teaspoon McCormick cinnamon

1 1/2 cup Dole pineapple, drained

mini marshmallows

Instructions

Combine sweet potatoes, brown sugar, egg whites, margarine, salt, cinnamon, and pineapple in a mixing bowl; beat well.

Butter baking dish; place half of mixture in dish and dot with marshmallows.

Add remaining sweet potato mixture to casserole dish.

Cover and refrigerate overnight if desired.

When ready to serve, preheat oven to 350 degrees F and bake for 40 minutes.

Remove from oven, dot with marshmallows and bake until golden brown, about 10 minutes.
