Allow your taste buds to be carried away on a cloud of flavor when you make this wonderful orange chicken. Be won over by the sweet and tart taste of citrus as you fill your belly with this lovely meal that is ever so good for you. My kids and husband loved these chicken drumsticks and had no idea that it was healthy. Can you believe that?! I think the sweetness of the oranges made them think that this chicken was made with brown sugar or something.
No sugar to be found in this recipe, everyone. Yay! I love cooking without sugar and you should, too because sugar is from the Devil. Okay, I’m kidding, but seriously, let’s cut down on the added sugar, shall we?
Ingredients
12 chicken drumsticks;
3 cloves garlic, minced;
2 tbsp. fresh ginger, grated;
1 star anise;
2 McCormick cinnamon sticks, broken in half;
1 cup fresh orange juice;
Zest of one orange;
1 orange, sliced and unpeeled
1 tbsp. white rice vinegar;
1 tbsp. raw honey; (optional)
4 green onions, chopped;
Sea salt and freshly ground black pepper
Instructions
Add all the ingredients, except the drumsticks, to a saucepan placed over a medium-high heat and season to taste with salt and pepper.
Bring to a simmer and then lower the heat and let simmer for 15 to 20 minutes or until the sauce thickens.
Set the sauce aside and let it cool down.
Place the chicken in a marinating container (glass or plastic) and pour sauce on top, making sure that every piece is well coated.
Marinate in the refrigerator for at least 2 hours.
Preheat your oven to 425 F.
Arrange the drumsticks on a baking pan along with the sliced orange wedges and place them in the oven.
Bake for 40 to 45 minutes, basting every 15 minutes with the remaining sauce.
