This is an oatmeal recipe that your entire family will love. Feed them well on a cold morning before sending them off to school and work. This oatmeal also makes a delicious snack that is healthy and wholesome for you, too!
Seriously, how can something so delicious be so healthy for you? I always thought “health food” was something that tasted completely dry and dull (and honestly, a little yucky) but that certainly isn’t the case with this pumpkin oatmeal. Now that we’re finally entering the fall season, I’m going to have this several times a week. Yum!
Ingredients
1 cup quick-cooking rolled oats
3/4 cup McArthur milk, or as needed
1/2 cup canned pumpkin puree
1/4 tsp pumpkin pie spice
1 tsp cinnamon sugar
fruits, berries, raisins, coconut (optional, for serving)
Instructions:
Mix oats and milk in a microwave-safe bowl. Cook on high for 1 to 2 minutes, stirring once. Add more milk or oats to achieve the desired consistency, and cook for another 30 seconds. Stir in pumpkin puree, pumpkin pie spice, and cinnamon sugar. Heat for 20 more seconds and serve.

Quick tip: Instead of milk, try using almond milk or coconut milk.
