I love finding good recipes that can be made for just about any occasion. Sometimes that is just not the case with some recipes. You know what I mean… when you have a recipe for Christmas tree shaped cookies, for example. As delicious as those may be, you really cannot (or should I say, should not) make those throughout the year because they are out of place.
Same goes for pumpkin pie. As delicious as it is, most people think it really only fits a season of the year and no one really makes it outside of that. Well, that is not the case for recipes like this one.
Recipes that are not exactly tied to a season or holiday tend to be my favorite because of their versatility. I can literally make them at any time of they year and no one will judge. Also, they are usually absolutely amazing.
That is exactly how it goes with this recipe. This dish is so full of flavor, cheesiness (because cheese makes everything 10x better!), and it has loads of grilled, caramelized onions which make these little babies enviable. You will be the talk of the town if you bring this to your next party!
