It doesn’t matter if you work in an office or outdoors as a farmer… you want to start your day off with a nice hearty breakfast. The problem we have, like most other families, there isn’t enough time in the morning to make something that is filling, and quick enough to be done before having to run out the door to start the day. The last thing you want to tell your boss is you’re late because you were waiting for breakfast… Not in today’s fast food society!
I don’t like feeding my loved ones fast food and we can only have oatmeal and pancakes so many times a week. This is a recipe I got from my wonderful neighbor Lisa almost ten years ago, when we had just moved into our new house. It was just what I was hoping for.
The ingredients are simple and affordable, and it can be whipped up in just a few minutes. I always make a double batch of this during the holidays, when we have family staying overnight. The leftovers heat up quite nicely and I frequently just have them for lunch if there’s anything remaining. A favorite at our breakfast table that’s for sure!
