One of my absolute favorite meals growing up was the simple and humble pasta and tuna dish my mom would make.
It was just a mix of pasta, tuna, mayo, salt and pepper and then maybe a squeeze of lime. It was so simple, I think I learned to make it when I was about 10. It was too easy to make and kid proof, really. I think I ate it at least once a week. It was straightforward and fun and honestly, just a really good meal after a swim or tennis match.
The other day, I was browsing Pinterest and came across this recipe. Tuna Noodle Casserole. Hmm, it sounded SO strange to me. I thought it would be gross and weird, but after giving it a try, I realized it resembled my favorite old food of pasta and tuna.
It was an easy and fun treat to make that was so reminiscent of the food of my past. I was so excited after trying it that I ran over to my mom’s house and took some to my siblings. They didn’t want to try it because they thought it was weird, but after a bit of prompting, they did and realized it is delicious!
