Take A Shortcut Lasagna Roll Ups

That night, and every night that I usually make this, I pair it up with a nice dinner salad and some homemade bread. There are tons of other ways you can serve this up including with a steamed vegetable or even a side of rice. It all depends on how many people you have to feed I think. Ingredients

1 package frozen chopped spinach, thawed and squeezed dry

2 cups Kraft mozzarella cheese, shredded

1½ cups cottage cheese

¾ cup grated Parmesan cheese, divided

1 egg

8 lasagna noodles, cooked and drained

1 pound lean ground beef

1 onion chopped

1 clove garlic

3 cups Ragu pasta sauce

 

 

Instructions

Preheat oven to 350 degrees.

Brown ground beef, onion and garlic until no pink remains. Drain and stir in 2 cups pasta sauce. Cook and drain lasagna noodles according to package directions.

In a small bowl, combine egg, spinach, cottage cheese, ½ cup parmesan cheese and 1 cup mozzarella cheese.

Lay out cooked lasagna noodles and divide cottage cheese mixture over noodles. Roll up.

Place 1 cup pasta sauce in a 9×13 dish. Place roll ups in dish and top with meat sauce. Cover with foil and bake 30 minutes.

Remove foil and top with remaining cheeses. Bake an additional 10 minutes or until cheese is melted.
