My daughter’s birthday was coming up right around the corner. She said this year, instead of having a big party, she just wanted to have a few friends over for some of my famous lasagna. No problem! How perfect, and affordable, would that be? It was so simple of an idea, I actually forgot all about it. It was about an hour before she was going to be coming home from basketball practice, and I hadn’t even started cooking yet…what a mistake!
That’s what I thought, until I remembered this recipe that I had found on Spend with Pennies for lasagna roll ups. I remembered they were much faster to make, so I got started right away. When my daughter and her girlfriends walked in, I was just pulling this out of the oven.
My daughter raised one eyebrow when I set the pan on the table as if to say, “What the heck is this?” I told her to just try it before saying anything. Thankfully, her and all her friends really enjoyed it. She told me she thought it was even better than the kind that I usually make… I don’t know if I’d go that far…but it’s good!
