The aroma that fills my house when I make this is undeniable. My kids even know when I have this going in the oven. Besides the fact that they bug me for the entire hour that it’s cooking wanting to know when dinner will be done, it’s good for all of us. I like to mash the potatoes and serve them with gravy because that’s how my family enjoys them. You can do whatever suits your fancy though. It’s your dinner! Whenever I make this meatloaf, I go back to my younger years when life was much easier…if only for a moment, it’s worth it!
Ingredients
1 1/2 pounds lean ground beef
1/2-3/4 cup Ritz cracker crumbs
1/4 cup Heinz ketchup
1/2 cup finely chopped onion
1 teaspoon salt
1/8 teaspoon black pepper
1 egg, beaten
Veggies:
4 small carrots
3 stalks celery hearts chopped
3 medium potatoes, peeled and quartered, or 4 to 5 small potatoes
8 small white onions, frozen or fresh peeled or 1 onion cut in big pieces
4 cloves garlic sliced
Instructions
Mix all ingredients for meatloaf together gently. Form into a loaf and place in baking dish or pan big enough to hold meat and veggies. Arrange carrots, celery, potatoes, garlic and onions around meatloaf; season with salt and pepper.
Add more ketchup on meatloaf. I add a little water to the pan to help cook. Cover pan with foil; bake at 375° for about 50 min. uncover and baste meat loaf with pan juices and bake 15 – 20 minutes longer, or until vegetables are tender. serves 4.
Preparation with out veggies:
Mix all ingredients together gently. Form into a loaf and place in baking dish or loaf pan. Top with more ketchup if desired. Bake at 375° for about 1 hour.
