When I was younger, my mom would say the word meatloaf and I would cringe. Yuck. Who wants meatloaf. Whenever she made it I would have a peanut butter and jelly sandwich. Her and my dad would always fuss over how good it was. I never understood it. Then, when I reached my teenager years, I became a little braver when it came to sampling the foods that my mom made.
I was growing up so I was going to eat grown up food. The first time I bit into her meatloaf I instantly understood why her and Dad always got so excited over it. It practically melted in my mouth. Paired up with the potatoes and other veggies, it just made me feel good all over.
Now, I make this meatloaf from Group Recipes for my family at least once a month. My kids aren’t crazy about it yet, but I know with age, they will learn to appreciate this dish like I did.
