My mom and dad were the masters at throwing a quick meal together in a skillet. We ate a lot of ground beef back then because it was cheap, and my mom didn’t like chicken so she did all kinds of things with hamburger. One meal that my dad was good at was the chili mac. It never looked all that great but it always tasted amazing. When I got older, I was certain it was one of those Hamburger Helper meals that they had been feeding us all along.
When I asked my dad about it, he said, “Heck no! I made that from scratch!” Okay, okay, just asking. Then, when I found this recipe on Spend with Pennies for one skillet chili mac, I thought it sounded familiar.
I decided to make it for my family and it was exactly like I remembered my dad making. It was so easy to toss together and my little ones gobbled it right up. I don’t think they even realized there was hamburger in it (which they think they don’t like) so it was a great way to get them some protein!
