When my sister-in-law finally got pregnant with her first baby, we were elated. She and her husband had been trying so hard and we were all praying for them. When it happened, I knew we would have to have a huge celebration to support them and to show our love for this new life that was coming into the world. Her mom agreed to have the party at her house, but she asked that we all bring a dish to pass. I brought my infamous meatballs which went over amazingly.
What was even better was the dessert. Her aunt and Grandmother took on the roll of making all the cakes, pies, and cookies…and it was all incredible. By far, the most delicious dessert was a lemon meringue cheesecake pie that her Aunt Linda had made. I took one bite and nearly fell to my knees. I couldn’t stop eating it.
It’s a good thing everyone else got a slice when they did or I would have eaten the whole thing myself. It was just like this pie on Spend with Pennies, and now that I have the recipe, I make it at home!

Quick Tip: Make sure your lemon filling is hot when you add the meringue to keep the layers from separating.
