This makes a nice big pan of coffee cake so it’s perfect for entertaining with. I like to make it for our church luncheons and book club nights. There are never any complaints when this walks through the door. The smell of it coming from the oven is so yummy too. I have a hard time waiting for it to cool before cutting up a piece to devour! Kids and adults all like coffee cake, even the picky ones.
This is so easy to toss together, you can easily make it for a breakfast dish or afternoon snack.
Ingredients
CAKE MIX INSTRUCTIONS
1 box yellow cake mix, I use Betty Crocker with a pudding mix
3 eggs
1 c water
1/3 c Land O’ Lakes butter
TOPPING
3/4 c Domino brown sugar
1 tsp cinnamon
1/2 c pecans
1/4 c flaxseed or another nut as desired
THE DRIZZLE
1 c powdered sugar
dash(es) maple extract
water, as needed
Instructions
Spray bottom of 9 x 13 pan.
Combine the cake ingredients as directed on box.
Combine topping ingredients.
Sprinkle 1/2 of topping and swirl in cake.
Rest of topping sprinkle on top of cake.
Bake at 350 until toothpick comes out clean about 30-35 min or according to cake instructions.
Let cool and drizzle with powdered sugar, maple extract and a little water.
