I Was Stunned By How Awesome This Turned Out!
Everyone in my family knows I’m crazy about enchiladas so they always send me all kinds of things related to the subject. I have an enchilada keychain, a pair of enchilada earrings (crazy, right?) and an enchilada-shaped pillow.
They think it’s funny that I could literally eat enchiladas every single day of the year and never get tired of them. And I think it’s cute how they think of me whenever they see “something-enchilada”, and want to give it to me as a surprise gift!
It’s not always just material things that they give me. A couple of weeks ago my friend called me; she said she specifically wanted to talk to me about a recipe she had made, because she thought I might like it. How sweet is that!
The recipe seemed very easy to make – and she was right, as soon as I saw it, I knew I would fall in love with it. I made this awesome layered BBQ chicken & sweet potato enchilada casserole a couple of days later and I still can’t stop thinking about it!

Quick Tip: If you’re not a fan of cilantro, you can omit it or replace with parsley.
