I am a sucker when it comes to sales, coupons, and saving money. I find myself often buying things that I don’t even need, just because it’s a good deal. Sometimes it’s household items, other times I buy clothes and shoes, and the grocery store is not off limits when it comes to saving money. Unfortunately, with this characteristic property, I often come home with stuff that I don’t really need. On one such trip, I found myself with several packages of spinach in my grocery bags when I came home.
Now, just because I don’t need them, doesn’t mean I am going to let them go to waste. I had to figure out what to do with the vegetable. Thankfully, I found this recipe for spinach casserole on Group Recipes. It looked pretty simple, and I had everything I needed…especially spinach.
I was nervous about how it was going to turn out, but much to my amazement, it was really good! Even my husband enjoyed it… I just didn’t tell him what was in it.
Now when spinach goes on sale, I don’t hesitate to throw it in my cart. I know it’s going to get used up!
