When I was in college, I took a trip with a few of my classmates over to some of the poorest parts of Africa. We were there to see what life was like, and to do our part to help. Some of the most devastating conditions that I have ever seen in my life were normal for them. No clean water, no clothes or shelter, and hardly any food. They didn’t eat, so we didn’t have much to come by either. It was one of the most eye-opening experiences of my life…and one of the most rewarding.
When I stepped foot back into my parent’s house, I was never so happy to be home. The first thing my loving mom asked me was what I wanted to eat. Believe it or not, I missed macaroni and cheese.
She told me she found a new recipe on The Pioneer Woman that she knew was the answer to my prayers. She made this spicy macaroni and cheese that was like nothing I had ever tasted before in my life.
It was the most amazing mac and cheese I had ever had. Maybe it was because I was so grateful to be home, but I will never forget how welcoming this was for me after my once in a lifetime experience.
