I had just went through one of the most hectic weeks of my life. At my job, the building was going under construction, and we were already overloaded with work so things were crazy to say the least. Two of my three kids had sports finals that week so we were hardly home. And, to top it all off, my husband was out of town for work.
So, everything was left on my shoulders for the entire week. When the weekend came around, I just wanted to stay in bed and watch movies for the entire time. I didn’t feel like doing anything at all.
I did however, want to have some tasty comfort food to go with my vegging out session. I remembered a recipe that I had seen on Recipe Lion for a sour cream and hashbrown bake that sounded delish.
I quickly whipped up a double batch on Saturday morning and munched on it all weekend long. It was just what I needed to top off my only relaxation time I had before another busy week kicked off.
