Slow Cooker Pulled Pork – Gently Cooked To Tender Perfection

I have got some pretty picky eaters in my brood. For example, and this is hilarious, my middle son will not eat a slice of BBQ pork roast on his plate with mashed potatoes and veggies. Do you know what he will eat, though? BBQ pulled pork on a bun. I don’ know if he just doesn’t realize that what he is eating is the same thing only with a bun or what. Oh well, at least he eats this amazing pulled pork 🙂

Who doesn’t love a good slow cooker recipe?!  It’s truly the best of both all worlds – you come home from work and your house smells wonderful, you don’t have to turn on the oven for hours and there aren’t a bunch of dishes to clean up afterwards.  Win, win in my book!

Oh, my! I love having my house filled with the wonderful scent of whatever is cooking in the crockpot. Yummo!

 

Ingredients

* 4 pounds pork roast (shoulder or butt)
* 2 large onions sliced (I used a sweet onion)
* 1 cup ginger ale
* 1 bottle (18oz) bottle of your favorite barbecue sauce
* 1 bottle barbecue sauce for serving (optional)

Instructions

Slice one onion and place in the bottom of the crockpot.
Put in the roast and cover with the other onion, sliced. Pour over the ginger ale. Cover and cook on LOW for about 12 hours.
Remove the meat, strain and save the onions, discard all liquid. With two forks, shred the meat, discarding any remaining fat, bones or skin (if any). Most of the fat will have melted away.
Return the shredded meat and the onions to the crockpot, stir in the barbecue sauce. Continue to cook for another 4 to 6 hours on LOW.
Serve with hamburger buns or rolls and additional barbecue sauce.
