One of my favorite meals when I was a kid was a nice pot roast. I was always so excited to come home and smell it cooking! I don’t think my mom ever thought to put it in the slow cooker, but it still always tasted fantastic. Now, with the busy schedules of today’s world, this is the only way to make a perfect beef roast without having to worry about the oven running for hours on end with nobody home.
It’s hard to believe that so many years ago we would walk out of the house with a gas stove running and not think too much of it. Today, I wouldn’t dream of taking that chance. When I throw this roast in the slow cooker, I know that it is cooking properly and safely.
My husband prefers mashed potatoes and corn so I usually cook those when the roast is just about done and make a nice homemade gravy out of the au jus that is left in the bottom of the pan. MMMMM! If there are any leftovers, (which is rare) the roast is perfect for beef and noodles or sandwiches the next day!
