There was only one vegetable that my brother would eat growing up…corn. I think it’s because it’s kind of sweet. Maybe it’s the color or texture, who knows. But, because that’s all that he would eat, we ate it… A LOT. So much so, by the time I moved out of the house, I no longer wanted to even look at corn. I would eat it on the cob during the summer at picnics and such, but that’s about it. That was the case for many years, until I found this recipe on Julie’s Eats & Treats.
We just happened to be going to my brother’s vacation home for a birthday party for my nephew. He asked that we bring a dish to pass, and so I thought of corn right away. When this recipe came up, I knew it was going to be the one to take.
Not only does my brother like the stuff, so do his kids. That’s one thing he passed on for sure. When I showed up with creamy cheddar bacon corn, it was nearly ripped from my hands.
They all gobbled it right up. In fact, everyone at the party really enjoyed it. This is my new favorite way to enjoy this vegetable without any doubt!
