My brother has always taken on the role of being the host for Easter dinners.
My sister does Christmas, and I usually take Thanksgiving. That way, nobody has to take care of all the meals and all the hosting every time. Last year, before Thanksgiving came around, my brother asked if we could switch holidays this year. He intended on going on a vacation over the Easter holiday, so he wasn’t going to be home. He didn’t want to skip out on his responsibility though, which was awfully nice.
We did it without a problem so instead of making a turkey I was cooking up a ham. No big deal. Except for I made way too much! I wasn’t thinking about my brother and his family being gone, so I made the same sized ham we always had. Holy leftovers! I was at a loss for what to do with all the meat until I saw this recipe for ham and scalloped potatoes.
Well, hot dog! That would work perfectly. I made them up the day after the holiday and it was incredible! I’m going to be sure to share this recipe with my brother too, so he knows the possibilities for his leftovers this year!
