Buffalo chicken wings has, and probably always will be, one of my most favorite food items. The only problem that I have with them, is when I order them out at a restaurant, or even cook them at home, it doesn’t feel like I am getting a whole meal. Sometimes I’ll order french fries or a baked potato to go alongside them, and it’s a little better, but it kind of just feels like I’m eating two appetizers.
Which in most instances is okay, but after a long hard day at work, I want the meat and potatoes. When my wife made me this buffalo chicken and roasted potato casserole, I felt like my prayers had been answered.
I asked her where she got the recipe and she said she found it on All Recipes. I told her that it was fantastic and that she can make it again for me anytime! She was so proud and I was so full. That was a dinner winner for sure.
