I remember back when I was growing up, whatever my mom made for dinner, that’s what we were eating, or we were going to go hungry that night.
Somewhere down the line, that got lost. I know it’s my fault at my own house. I want to be sure that my son and daughter both get to eat something that they like, and I want to eat stuff that I like. A lot of times, that means making a few separate dishes so that everyone can be happy.
It can be a lot of work though, especially on those busy weeknights when we are all running in different directions. When I find a recipe that everyone under my roof can agree on, I hold onto it tightly.
When I found this recipe for taco pizza on the web, I had high expectations. I know we all like tacos, but they can get boring week after week. This would be a nice change. Thankfully, it turned out super tasty and everyone liked it.
It was also really easy to make and cleanup. It’s a winner in my book. This recipe card isn’t going anywhere anytime soon!
