I was an only child for about seven years growing up before my parents had my little brother. I have some of the very best memories of those first seven years. It was the only time that I ever got any alone time with my mom or dad, because after the baby was born, we were a family of four. Not that I didn’t love that little guy, and I still do very much, but the days of having my parents all to myself were over.
Back then, one of my favorite days of the week was Wednesday. My dad played on a bowling league on those nights, so me and Mom had the house to ourselves. That meant we got to eat whatever we wanted.
So many times, Mom would make her tuna noodle casserole. Dad didn’t like it so that was our chance to have it. It was one thing that we both loved, and still do! This recipe from All Recipes reminds me a lot of hers.
I make it at home for me and my daughter now too. Even my husband likes this dish!
