Queen Victoria Layered Sponge Cake – A Royal Treat!

Sugar and spice and everything nice this layered sponge cake is dainty and delicate but big on flavor.

I remember one time when I was growing up my mother made a “sponge” cake for one of her friends from church. When I say “sponge” I mean she actually decorated a piece of rectangular sponge with frosting and served it o the guy. I can remember him trying to chew off the first bite. He said, “Wow! This sure is rubbery!” LOL, My mom and her friends roared with laughter. My mom was and is a prankster.

The recipe on the next page is no joke, however. My friend from Bake With Sarah has developed us a really nice treat to enjoy. It’s a layered sponge cake filled with fruit jams and lots of love. Enjoy!
