I was always that person who had to keep their food very separated on the plate. No two meal items could ever touch, and if they did…oh boy. I was done eating that portion of the food.
One day, I didn’t realize it until it was too late, my meatloaf had touched my mashed potatoes. I put the bite in my mouth before I even realized what had happened. At first I was in shock, but as I chewed I thought, well this isn’t all too bad.
It was something that I started doing regularly, until I found this recipe on Recipe Lion for meatloaf casserole. This already had the meatloaf and the potatoes baked together into one dish! How simple is that?
I gave it a try with the blend of soups and it was delicious. Everyone in my family loved it! Even my daughter who usually won’t touch meatloaf gobbled this right down.
Now I make this pretty regularly instead of plain ol’ meatloaf. It’s always so good.
