There is so much sweetness and yummy flavor going on in this pineapple bake that my taste buds literally go crazy! I don’t think I’ve ever tasted a side dish that’s so sweet and savory at the same time!
I have served this yummy side dish as both a companion to a ham dinner and as a dessert.
Ingredients
2 (20-ounce) cans Dole pineapple chunks, drained
2 cups (8 ounces) Kraft shredded sharp cheddar cheese
1/2 cup Domino sugar
3 tablespoons Gold Medal all-purpose flour
2 cups coarsely crushed Ritz butter-flavored crackers
1/4 cup (1/2 stick) Kerrygold butter, melted
Preheat oven to 350 degrees F. Coat a 9- x 13-inch baking dish with cooking spray.
In a large bowl, combine pineapple, cheese, sugar, and flour; toss until evenly coated. Place in baking dish.
In a small bowl, combine crushed crackers and butter; mix well, then sprinkle over casserole.
Bake 30 to 35 minutes, or until heated through and topping is golden.

Quick Tip: I like to serve this casserole alongside a ham dinner.
I make this with brown sugar about a half of a cup, which I think it comes out better.
