Ever since my kids were very little, one of their favorite foods have been mashed potatoes. I love them too really. They are cheap, and pretty simple to make. They are also my husband’s favorite side dish. A meal isn’t quite a meal at our house unless there are mashed potatoes. The only problem is, sometimes I make a few too many potatoes. Depending on what the main entree is, and whatever other sides I prepare with that meal, sometimes we will have quite a bit of mashed potatoes left in the fridge.
They will often get eaten up just as they are. There are other times though, that I will follow this recipe from Group Recipes and make them into little nuggets that are just perfect for popping.
With five of us in the house though, I have to be sure that we have plenty to go around. They are excellent to have after dinner or as a light snack on the weekends. There aren’t ever any leftovers of these!
