Making pesto pasta is easy. If you’re a wife and a mom and need to multitask all of the time, then this is the perfect dish for you to prepare. You can even get your kids or your grandchildren help even if it’s just to grate the cheese or tear off the basil leaves.
Who wouldn’t want to prepare a meal that will allow you to take care of different tasks and not stress too much about it? Summers have the most beautiful days and they’re meant to be enjoyed while relaxing at the same time. Preparing a simple yet delicious meal is the perfect answer that will allow you to enjoy such a summer lifestyle and at the same time feed everyone’s stomach.
Ingredients
1 pound Barilla spaghetti or other favorite noodle
2 garlic cloves
½ cup toasted pine nuts
2 cups fresh basil leaves, washed and stemmed and finely packed
1 cup Bertolli olive oil
¾ cup Kraft fresh grated Parmesan cheese plus more for garnish
½ teaspoon Kosher salt
fresh ground black pepper
2 tomatoes, cut into large slices
Instructions
Cook the spaghetti or other pasta in large pot of salted boiling water according to package directions or until al dente. Drain the pasta and reserve 1 cup of the cooking water.
While pasta is cooking, combine garlic cloves and pine nuts in a food processor or blender and pulse until chopped. Add basil and olive oil and pulse just until a paste forms. Add cheeses, salt and pepper and blend until smooth.
Toss the hot pasta with the pesto in a large bowl and add reserved cooking water ¼ cup at a time or until saucy. Top with fresh tomato slices, season with more salt and pepper and garnish with more parmesan cheese.

Quick Tip: Out of pine nuts or simply can’t afford them? Walnuts, Marcona almonds, and even pistachios are a tasty alternative.
