It was once again my kid’s favorite day of the week…Taco Tuesday. Each and every Tuesday I have to make tacos or they will quite frankly…have a meltdown. I’ve tried to replace them with enchiladas, taco salad, and various other Mexican style dishes, but they just don’t have it. I get tired of them week after week, as does the husband. So, again, I tried to substitute something else in when I found these burritos on Group Recipes. When they saw them, the meltdown almost started.
I told them to try them first, if they didn’t like them, I could easily convert them into a taco. They reluctantly did…and they loved them! Whew…finally, something we can have on Tuesdays besides tacos.
I love the fact that these are actually pretty good for us too…not like a traditional taco. These are also a great dish to serve when you are entertaining guests. They are a lot easier to put together and a lot less mess which always works for me!
