Peanut Butter Lover’s Monster Cookies

Whenever my kids have to take a snack for school, I try and make these for their entire classroom and their teachers. They are always a huge hit among every age group from elementary school through senior high. I do have to double the recipe but then we have some to keep at home too! It’s a good idea to take these to a party or event so you don’t eat them all yourself! If you have little ones, these cookies don’t stand a chance.

 

Ingredients

1 cup peanut butter

1 cup butter room temperature

1 cup brown sugar

1 cup granulated sugar

2 eggs beaten

2 teaspoons vanilla extract

1 teaspoon baking powder

3 cups Gold Medal all purpose flour sifted

1 teaspoon salt

1 cup raw sugar for sprinkling

1/2 cup Jif peanut butter for filling

4 tablespoons butter for filling – room temperature

2.5 cups powdered sugar for filling

3 tablespoons milk for filling

2 ounces Philadelphia cream cheese for filling – room temperature

 

 

Instructions

Line a baking sheet with parchment paper or…I use and recommend silpat’s for baking cookies, never a burned bottom and so easy to clean and reuse.

Beat your peanut butter, butter, granulated sugar and brown sugar together until creamy.

Add your eggs & vanilla.

In another bowl sift your flour, salt and baking powder together. You can also just use a fork to mix these together and smash any lumps before adding to your wet ingredients.

Add your flour, salt & baking powder to your wet ingredients and mix until combined.

Once combined use a cookie scoop or tablespoon to get the proper amount of cookie dough, then roll it into a ball, squish a little to flatten and place on a parchment lined baking sheet.

Sprinkle raw sugar on top of the cookies.

Place cookies in oven for 11-12 minutes or until slightly golden brown.

Now we’re going to make our filling. Cream your butter, cream cheese and peanut butter together

Add your powdered sugar and milk and mix until combined and smooth. Having your ingredients and room temperature will prevent lumps.

Scoop some filling out and spread on the bottom of a cookie, then add the other cookie to sandwich that yummy goodness in.
