Box these little beauties up and give ’em away as Christmas gifts. Or, just eat them all yourself ya little Scrooge. LOL I actually put them into small decorative tins and passed them out at church to our friends and family. I also attached a Christmas photo of my family. I thought it made quite a lovely gift. and yes, I did stash a tin aside for myself. How could I not? However, I didn’t give myself a photo haha!
These little peanut butter balls are pure bliss. I love them and so do my husband and kids. They aren’t hard to make either which makes them the perfect treat to make with little helpers.
Ingredients
1 cup Domino powdered sugar, plus 2 tablespoons
3 tablespoons Kerrygold soft butter
1/2 cup Jif creamy peanut butter
12 ounces white chocolate candy coating
Sprinkles for decorating
Instructions
Line a cookie sheet with parchment or waxed paper.
Combine 1 cup powdered sugar, butter and peanut butter in a large bowl, stirring until completely mixed and smooth.
Sprinkle the remaining powdered sugar on a clean work surface and form the dough into a log shape 12 inches long. Cut into inch pieces and roll each between your palms to make smooth balls. Place on the prepared bake sheet and chill in the refrigerator for 30 minutes.
In a medium bowl, melt the candy coating in 30 second intervals in the microwave, stirring until completely smooth. Dip the balls into the candy coating, return to the lined sheet and add sprinkles as desired while coating is still wet. Return to the refrigerator until ready to serve.
